说到散白酒,大家了解比较多的就是酱香型,浓香型的白酒吧,那么今天小编要和大家一起了解下白酒的陈味, 陈年老酒也分:酱陈、窖陈、木陈、醇陈、油陈、老陈、曲陈等七种陈味。酱陈有点酱香气味略带陈醋香气;窖陈,相似老窖底泥香气;木陈,似老木头香味;醇陈,一种幽幽而漂浮不定的陈香;油陈,带脂肪酸酯的香气;老陈,略带细微的、舒服的药香气味;曲陈,相似焙烤食物的焦糊香。

一、酱 陈
1、 Sauce Chen
“酱陈”有点酱香气味,似黄豆酱油气味与高温陈曲香气的归纳反应,所以,酱陈似酱香又与酱香有差异,香气饱满,略带陈醋香气(或果酸香气)。
"Sauce aging" has a little soy sauce smell, which is similar to the inductive reaction between soybean soy sauce smell and high-temperature Chenqu aroma. Therefore, sauce aging is similar to soy sauce smell and different from soy sauce smell, with full aroma and slightly aged vinegar aroma (or fruit acid aroma).
这种风味在陈年浓香型白酒里特别能感受得到,浓香型老酒的主要陈味常以酱陈、窖陈和曲陈味为主,其生成的原因是制曲过程中曲温较高因此产生。

二、窖 陈

所谓“窖陈”就是具有窖底香的陈气味或者说陈香中带有窖香气,并且是老窖底泥香气(像臭皮蛋的气味或像石灰味),比较舒服细腻,是由窖香浓郁的底糟或双轮底酒经长期贮存后形成的特别香气。
The so-called "cellar aging" refers to the aging smell with cellar bottom aroma, or the cellar aroma in the aging flavor, and the old cellar bottom mud aroma (like the smell of rotten preserved eggs or lime flavor), which is more comfortable and delicate. 木陈,顾名思义,带有木头香味的陈香,似老木头香味,这种香味在剑南春中较为显着。

4、 Mellow
这里提到的醇陈,是一种幽幽而漂浮不定的陈香,在中低温白酒中能够碰到,清香型白酒和米香型白酒以老陈、醇陈和油陈为主,特别是陈年清香酒中较为常见,闻起来十分淡雅。

五、油 陈

所谓“油陈”是带脂肪酸酯的香气,但不是油腻气味,有细微的豉香气,舒服迷人。这种陈香在豌豆入曲的白酒中较为常见,其实质是含有较高蛋白质质料。
The so-called "oil aging" is the aroma with fatty acid esters, but it is not greasy. It has a slight smell of black bean, which is comfortable and charming. This kind of aroma is common in Baijiu liquor. Its essence is high protein material.
六、老 陈
6、 Lao Chen
这是陈年老酒里常见的一种陈味,它略带细微的、舒服的药香气味,十分饱满、幽雅、细腻。
This is a common old flavor in old wine. It has a slight and comfortable smell of medicine. It is very full, elegant and delicate.
这种香味常见于长期低氧发酵的浓香酒。
This kind of aroma is common in Luzhou flavor wine with long-term low oxygen fermentation.
七、曲 陈
7、 Qu Chen
曲陈似归纳氨基酸的香气味或陈曲断面时的香气味,粮食(面精)生产味精的香气略带焦糊香气,发酵温度越高的大曲,这种香气越显着。
The aroma of amino acids or the aroma of the section of the aged Qu is similar to that of the aged qu. the aroma of monosodium glutamate produced by grain (flour essence) is slightly burnt. The higher the fermentation temperature of Daqu, the more significant this aroma is.
不过曲陈是一种饱尝争议的滋味,没有明确代表哪一种酱香曲或是浓香曲之类的白酒曲香
