按理说一般白酒的颜色是无色透明的,但为什么有的酒却色泽微黄?其实是有一定原因的:

1.酿酒时用的辅料含有一定的色素,在发酵的过程中,产生有色物质,导致酒色微黄。

2.酒在存放过程中,所含酚类物质发生氧化反应,致使酒色微黄。

因为酿酒过程工艺繁多,甚至发酵时微量元素众多,其中不乏一些造成酒液微黄的因素所在。其实酱香型白酒造出的时候,也是无色透明的,但存放的时间越久,就会起到氧化反应,发生变色。
