窑藏的形式分成土藏和洞藏。土藏白酒是将酿造好一点的原浆白酒埋到土窖里边,保存一段时间后拿出来。土藏的纯粮酒不仅有五谷的香味外,还掺杂着泥土的气息,二味交叉,香甜可口。而窑藏纯粮酒在窑藏的过程当中,吸取石头的气息味儿,香醇也十分的与众不同。

窖藏白酒的化学反应鉴于原浆白酒未加上纯粮酒之外的一切化学物质,其酒分子依然保持着非常好的可靠性,在窑藏的过程当中,容器里的酒在适宜的温度下通过器皿感受着窖内干燥度合适的气体,悄然发生三种转变:
Chemical reaction of Baijiu in cellar In view of the fact that raw Baijiu does not add any chemical substances other than pure grain liquor, its liquor molecules still maintain very good reliability. During the process of cellar storage, the liquor in the container feels the gas with appropriate dryness in the cellar through the vessels at the appropriate temperature, and three changes quietly occur:
1、蒸发功效:刚蒸出的酒一般带有氯化氢、碳醇等易挥发的硫酸盐,并且也带有代烃等刺激高的挥发性物质。这种物质在窑藏期内可以当然蒸发。一般通过六个月的窑藏后,基本上检验出不来酒里硫酸盐的出现,使白酒的刺激大大减轻。

This substance can naturally evaporate during the kiln storage period. 2、分子间的质子化:酒精和水全是分子,经窑藏后,使乙醇分子和水分的排序逐渐理清,进而增强了乙醇分子的桎梏力,减少了乙醇分子的活跃度,使白酒口感越来越温和,此外,纯粮酒中别的香气物质的分子也会带来以上质子化功效。当酒里质子化的分子群提升,得到拘束的分子越大,口感也就越柔软、温和。

3、化学反应:纯粮酒在窑藏环节中能够产生缓慢化学反应。便是酒精在醇酸酯化反应环节中形成一个新的脂类。窑藏时间越长产生的脂类也就越多,酒的香味也就越大。其实就是通常所说的去杂提鲜。因而窑藏其实就是储藏的一个过程。而家中收藏自己喜欢的纯粮酒不仅满足了个人的爱好,都是中华酒文化的一种体现。但家中储藏标准限制,可因人自宜,住房子是下边室,假如在乡村有地下室那就更好了,这样的地方储藏酒,可以跟地脉想接,其空气湿度和酒窑比较接近,但是不能过于湿冷,经其岁月运转,吸其日精月华,假以时日,所藏之酒必成其为佳品

Therefore, kiln storage is actually a process of storage. Collecting your favorite pure grain liquor at home not only satisfies your personal interests, but also reflects the Chinese liquor culture. However, the storage standards at home are limited, and it may be appropriate for individuals to live in a lower room. If there is a basement in the countryside, it would be even better to store wine in such a place. It can be connected to the ground, and the air humidity and wine kiln are relatively close, but it should not be too damp and cold. After years of operation, it can absorb the essence of the sun and the moon. Over time, the wine stored will become a good product.
1、一定要传统手工艺制造的纯粮原浆酒。销售市场售卖的瓶装白酒,大部分要加浆酒,所说加浆,便是放水。加工厂蒸馏白酒后的接酒度数一般在55度65度间。刚出产的酒为原浆酒,这种酒务必储藏成熟,一般在6个月之上,储藏到期酒出厂时,检测、品鉴,验收合格后,依据技术标准开展勾调,除了不一样质量、不一样近视度数的酒开展勾调外,更为关键的是自来水降度,使之做到产品酒的度数。但这些添加了水纯粮酒已破坏酒分子的稳定,特别是装到玻璃瓶子内,纯粮酒已经无法通过玻璃瓶子开展吸气,因而这种纯粮酒已无法通过储藏来提高品质,如果是劣质酒,时间一长便会霉变。

2、如想要通过收藏白酒来提高质量,其盛酒容器佳选是紫砂壶,次之陶、瓷。紫砂的密度界于陶、瓷中间,有利于纯粮酒吸气。假如仅仅是为了能个人收藏,玻璃瓶子也可以的,它不仅能维持原先的质量,又不可意使瓶内纯粮酒酒精挥发。

如何保存纯粮酒
How to Save Pure Grain Wine
1、检查一下你窖藏,把瓶塞重新扭紧一下,避免因瓶塞松脱“跑酒”。
1. Check your cellar and tighten the cork again to avoid the risk of alcohol escaping due to loose corks.
2、保鲜膜将瓶塞细心包裹,用透明胶布缠紧,然后把食用蜡放入不锈钢容器里升温,待蜡溶化成液态后,把酒瓶子颠倒过来,将瓶塞直接从容器中浸一下开展蜡封。封腊自然就是阴凉干燥处,温湿度适合就行了,时长不受限制。

After the wax dissolves into a liquid state, turn the wine bottle upside down and soak the cork directly from the container to seal it with wax. 3、白酒存放的器皿一定要瓷器或玻璃,储存的位置是地底或床下等阴凉的地方。
